The Olive Grove

100% ITALIAN OLIVES

The main varieties I grow are: Grignano, Leccio, Leccino, Moraiolo and Favarol. The harvest begins at the end of October, when the nets are spread out at the foot of the trees. A special stick and rake are used to harvest the rest of the olives by hand, and then all the olives are collected together and placed in crates.

COLD PRESSING

We take the olives to the mill, where they are cold-pressed to extract the oil. The oil thus obtained is placed in 25 or 50-litre steel containers, in 5-litre containers, or half-litre bottles. It is delicious on a slice of bread or as a condiment for all kinds of food.

RESPECT FOR THE ENVIRONMENT

Ca’ del Volo is nestled in the heart of the greenery, surrounded by subtle, natural hues, trees that whisper to the visitor and envelop them in a protective embrace. I take painstaking, loving care of my olive trees and their fruit, which give us a precious, special oil.

An intense, rounded flavour, ideal as a condiment for typical Italian dishes, but also delicious on its own to accompany a slice of fresh, crusty bread. It’s the favourite memory our guests take away with them.
